INGRIDIENTS

  • 2 tomatoes
  • 2 fresh red peppers
  • ¼ cup sun-dried tomatoes
  • ½ large onion
  • ½ cup almonds or hazelnuts
  • 6-8 cloves garlic
  • ½ cup olive oil
  • ¼ cup red wine vinegar
  • Salt and pepper to taste
INSTRUCTIONS
  1. Preheat the oven to 400°F (200°C). Slice the onion and tomatoes. Place them on a baking sheet with whole garlic cloves. Roast in the oven until caramelized.
  2. Rub the red peppers with olive oil. Grill or roast over an open flame until charred. Place them in a bowl, cover, and let sit for one hour to steam.
  3. Peel and seed the roasted peppers.
ROMESCO SAUCE
  1. In a food processor, combine the roasted peppers, sun-dried tomatoes, nuts, onion, roasted garlic, and tomatoes. Season with salt and pepper. Add the red wine vinegar and drizzle in the olive oil while blending. Keep blending until the mixture gets to the consistency you like. Adjust seasoning if needed.
  2. Slice the Lion’s Mane mushrooms and season with salt and pepper. Drizzle with olive oil. Grill over medium-high heat for 3-4 minutes on each side.
  3. Heat a pan on the stove, and add olive oil. Sauté the spinach until wilted. Remove from the pan.
